Banana Chocolate Chip Muffins

3 very ripe bananas mashed (could be frozen)
¼ cup of unpasteurized honey or agave syrup
½ cup organic applesauce
¼ cup of sunflower oil or butter
½ teaspoon baking soda (with no aluminum)
1 ½ cups flour spelt ( or whole wheat)
1 cup unsweetened chocolate or carob chips (you can use ½ and ½ )

Preheat oven to 350 degrees.

Mix bananas, oil, applesauce and honey with an electric beater then add the baking soda and flour. Stir in the chocolate chips. Pour into muffin tins lined with unbleached paper cups and bake for 20-25 minutes.

Makes 12 muffins.
