Black Bean Dip

This is a high protein dip or sandwich spread. The salsa provides a good source of lycopene which is a cancer preventing anti-oxidant, the lime juice and cilantro provide vitamin C.

1 14 oz (398ml) can black beans rinsed and drained
½ cup (125ml) tomato salsa
2 tablespoons (30ml) lime juice
2 tablespoons fresh cilantro
¼ tsp cumin
Salt and pepper to taste

Put all ingredients into a food processor and blend until smooth.
Enjoy as a dip for raw vegetables or crackers.
