Carrot Cake Muffins (Gluten Free)

Sent to us from Vancouver’s Granola Girl. My Son’s Grade 3 class loved these for his Hallowe’en party!

Gluten FreeWheat Free

Combine in a large bowl:
3 cups grated carrots
2 eggs
1 Tbsp water
½ cup honey
Juice of one lemon

In a separate bowl:
2.5 cups almond flour
1 cup chopped pecans
1 Tsp baking soda
½ Tsp sea salt

Add wet ingredient to dry ingredients.
Optional - add ¼ cup raisins
Bake at 310 degrees F for 35-45 minutes
