Maple-Hemp Cookies

Maple syrup adds its familiar flavour to these hemp-enriched cookies.

Wheat Free

1 cup kamut flour
1/2 cup barley flour
1-1/2 tsp. Aluminum free baking powder
1/4 tsp. sea salt
1/4 cup hemp seeds
½ Tsp cinnamon
1/2 cup maple syrup
1/4 cup plus 2 Tablespoons almond butter
1 Tsp. pure vanilla extract
1/2 Tsp. almond extract
3 Tablespoons extra-virgin olive oil


Preheat oven to 350 degrees.

In a large bowl, combine all the dry ingredients and mix well.

In a small bowl, combine the maple syrup, almond butter, vanilla, extracts, and oil.

Stir the wet ingredients into the dry until well mixed.

Using a tablespoon, drop the batter onto cookie sheets about 2 inches apart. Press down slightly to flatten each cookie.

Bake 10-12 minutes, until just golden. Remove from oven and allow to cool before removing from sheets.

Makes 20-24 cookies. May be frozen.
