Oatmeal Pancakes

Gluten FreeWheat Free

1 ½ cups Organic oatmeal
2 cups milk/almond milk/soy milk/rice milk
3 eggs
¼ cup olive oil
1 cup chickpea or almond flour (you can try out different flours)
2 Tbsp aluminum free baking powder
¾ Tsp sea salt
½ Tsp cinnamon
½ Tsp vanilla

Add ground flaxseeds, hemp hearts or salba as desired.

Combine the wet ingredients and add to dry. and whisk just until combined. Don’t beat or over mix.

Drop by spoonfuls (2 per cake) onto the griddle or skillet. Cook until the tops are bubbly and edges are brown. Turn and cook until light brown.
