Romaine Lettuce With Oranges

My childhood friend, Tammy, passed this recipe on to me. It’s a great salad to use for entertaining a large group.


1 large head of romaine lettuce
8 mushrooms, sliced
2 cups grated Swiss Cheese
1 cup seedless red grapes
1 cup fresh or canned orange sections
½ cup sliced almonds, toasted

Poppy Seed Salad Dressing

¼ cup honey
¼ cup cider vinegar
1 Tablespoon poppy seeds
2 Tablespoons Dijon mustard
4 Teaspoons finely grated onion
¾ cup olive oil (can add some flax oil as well for some omega 3’s)

Combine all ingredients except oil. Add oil a little at a time, stirring well.
Salt and pepper to taste.

Tear lettuce into bite size pieces. Toss with sliced mushrooms, cheese, grapes and oranges. Add dressing and toss. Add almonds last.
